Wild Rice Salad with Edamame, Walnuts, and Red Grapes

Easy to prepare, this delicious salad makes for a delectable lunch or dinner for three.
This recipe is provided by the dietitians at Ascension St. Vincent’s Ministry in Birmingham, Alabama.
Makes 3 servings.
Ingredients
  • 1 (8.8 oz.) package of microwavable wild blend rice
  • ¾ cup frozen shelled edamame
  • ½ cup quartered red grapes
  • 2 tablespoons chopped toasted walnuts
  • 1 stalk celery, finely chopped
  • 1 green onion, thinly sliced
  • 1 tablespoon fresh orange juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • ½ teaspoon honey
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper
Instructions
  • Cook rice and edamame according to package directions.
  • Combine rice, edamame, cranberries, pecans, celery, and green onion in a large bowl.
  • Whisk together orange juice, vinegar, oil, honey, salt, and pepper in a small bowl. Pour dressing over rice mixture, tossing to coat. Divide into three equal servings.
