Healthy Recipe Resource: Mashed Cauliflower

Makes 4 servings
Ingredients
  • 1 lb. chopped fresh cauliflower florets (about 5-½ cups) 
  • 2 cloves garlic, smashed 
  • 2/3 cup fat-free, lower-sodium chicken broth 
  • 1/2 teaspoon kosher salt 
  • 3 tablespoons nonfat plain Greek yogurt 
  • 2 teaspoons butter 
  • Black pepper to taste (optional)
Instructions
  • Combine cauliflower, garlic, broth, and salt in a saucepan; bring to a simmer. Cook
  • Transfer mixture to a food processor. Cover and process until blended. Add yogurt and butter; cover and process until smooth. Add pepper to taste.
  • Serve and enjoy!
