Makes 4 servings
Ingredients
- 1 lb. chopped fresh cauliflower florets (about 5-½ cups)
- 2 cloves garlic, smashed
- 2/3 cup fat-free, lower-sodium chicken broth
- 1/2 teaspoon kosher salt
- 3 tablespoons nonfat plain Greek yogurt
- 2 teaspoons butter
- Black pepper to taste (optional)
Instructions
- Combine cauliflower, garlic, broth, and salt in a saucepan; bring to a simmer. Cook
- Transfer mixture to a food processor. Cover and process until blended. Add yogurt and butter; cover and process until smooth. Add pepper to taste.
- Serve and enjoy!
